Until a few years ago I was dubious about whether or not to try spam: it’s far from exotic, just nothing seemed appealing about processed meat in a block shaped can. Stereotypically, and idiotically I assumed it would taste similarly to corned beef – a past time food which I wish could disappear along with Avacados & tuna mayonaise baguettes (- that alone is a rant for another time). Much to my surprise ‘spam’, let’s not forget to mention that other brands are available, is the salty goodness I have begun to crave too frequently. Spam ham is fairly versatile and in Korea is consisdered a cheap alternative to higher quality meats that tend to be more expensive even if purchased from a butcher. Fried dishes, rice based meals in particular, are suitable for adding chunks of spam.
Ingredients (serves 2):
- Long grain rice, plain or mixed in with black beans (1 cup = 1 portion, for 1 person),
- Half a white or red medium sized onion,
- 100g of Spam,
- 1 medium sized white baking potato,
- A handful of diced Spam (usually this is half/100g of a 200g can),
- 2 large free-range eggs,
- Soy sauce,
- Sesame oil,
- Hot Chilli powder,
- Rock salt/sea salt,
- Black pepper.
Cooking time is approximately 30-35 minutes.
Firstly you will need to boil your rice. Utilising a rice cooker is simple compared to boiling loose grains in a saucepan, or when I don’t have access to such equipment I see nothing wrong with using a microwaveable packet/tray of rice. Remember one packet typically serves two people.
Prep the onion, spam and peeled potato by dicing then into cubes. Try to cut them into equal sizes to ensure each ingredient cooks at the same pace.
In a non-stick wok or decently sized frying pan, heat up a standard amount of olive oil over a medium heat. Then directly add the cooked rice into the wok/frying pan. It’s important that you don’t use too much oil from the start otherwise the rice will be too wet: fried rice should be somewhat dry.
Crack the two eggs into small bowl or container. Add a pinch of black pepper and salt before lightly whisking the eggs with a fork.
After around 8 minutes of frying the rice by itself, shift the rice to one side of the pan and pour in the raw egg into the other half of the pan.
Stir around, and break up the eggs whilst its cooking until it resembles scrambled eggs. Once the eggs are fully cooked you may stir them into the rice until distributed.
Not long after step 5, go ahead and add the onions into the rice and eggs. Turn the heat down to low-medium strength.
Once another 5 or so minutes have past, combine the potatoes and spam with the other ingredients which are frying.
When the onions and potatoes are golden in colour, drizzle 2 capfuls off soy sauce and half a teaspoon of sesame oil into the rice: you must stir or repeatedly flip the rice quickly as the newly added liquids can easily burn away or stick to the pan rather than get absorbed by the ingredients. Do not estimate how much sesame oil to use, measure it out as it’s potent taste can overpower all the other flavours within the dish.
Now add your choice of salt and chilli pepper to taste. Fry all the components for a further 8-10 minutes.
As a serving suggestion, top the rice with sesame seeds along with hot sauce or tomato ketchup.
